(PARMA)- Francesco Lorusso, a chef from Lucania, is among the best emerging chefs in Italy. The award was received in the context of the EMERGENTECHEF 2022 Competition, organised by WITALY at ALMA, the International School of Italian Cuisine, based in Cadorno.
Lorusso, a young chef at Bramea in Palazzo San Gervasio (Pz), accompanied by Antonio Menchise, the dining room manager, and Rocco Catalano, a Lucanian journalist and wine and food critic, presented the jury of the prestigious award with two dishes that exalt the excellence of the territory and tell the Lucanian story: Fermented Candonga strawberry, Amaro Lucano Essenza, goat cheese, charcoal-grilled artichoke cream and courgette top salad; Gigli 'Pastificio dei Campi' lilies cooked in hay infusion, mantecati with Lucano black pig lard, Parmigiano Reggiano, podolica cow heart and Staccia di Tursi orange gel.
'This is a great result,' says Rocco Catalano, 'that rewards the commitment, perseverance and love that the Bramea guys have for this job and for Basilicata. An ancestral love that binds a vision of the future, modernity, without banality, but with an ancient heart and feet firmly on the ground of hard work and humility."
The success of Lucanian chef Lorusso is an extraordinary achievement for the whole of Basilicata, which continues to achieve important successes in the food and wine sector in Italy and around the world.
