Flavoured Pumpkin Velouté
The delicate taste of cream of pumpkin soup
Ingredients for 4 persons
- Pumpkin, 1 kg;
- 2 tablespoons of Evo oil;
- ginger;
- cinnamon;
- nutmeg 1 tsp;
- low-fat Greek yoghurt, no. 1 pot;
- salt, pepper to taste
Procedure
Clean the pumpkin, cut it into pieces and boil it in lightly salted water. Drain it and blend it with the Greek yoghurt, EVO oil, salt, pepper and spices.
Serve the pumpkin soup warm in single-serving bowls before dinner.
