Light and crumbly shortcrust pastry
Ingredients
- n.1 egg
- 100 g sifted sugar
- 200 g sifted type 0 flour
- 50 g potato starch
- 80-100 ml EVO oil
- Optional: 30 g dark chocolate chips
- Optional: grated lemon or orange peel
Procedure
In a bowl, add the ingredients in the order described above and mix until you obtain a soft dough ball. Allow to rest at room temperature for 5 minutes.
Form about 25 balls, crush with your hands, cut out the petals with a knife and create the petals with your hands (or give the desired shape with a biscuit cutter).
Bake at 125° - depending on your oven - for about 10 minutes until golden brown.
