Light and crumbly shortcrust pastry

Ingredients

  • n.1 egg
  • 100 g sifted sugar
  • 200 g sifted type 0 flour
  • 50 g potato starch
  • 80-100 ml EVO oil
  • Optional: 30 g dark chocolate chips
  • Optional: grated lemon or orange peel

Procedure

In a bowl, add the ingredients in the order described above and mix until you obtain a soft dough ball. Allow to rest at room temperature for 5 minutes.

Form about 25 balls, crush with your hands, cut out the petals with a knife and create the petals with your hands (or give the desired shape with a biscuit cutter).

Bake at 125° - depending on your oven - for about 10 minutes until golden brown.
