Vegetarian carbonara was created as a way of striking a balance: it retains the creaminess and comfort of the traditional dish, whilst reducing its fat and protein content.

In the Typigo model, this represents a a conscious reinterpretation, where ricotta replaces the egg and the courgettes provide fibre, water and micronutrients.

It is a first course that retains its character and flavour, whilst reducing its overall metabolic impact.

Ingredients for 2 persons

  • 160 g wholemeal spaghetti

  • 3 courgettes

  • 200 g fresh cow’s milk ricotta

  • 2 tablespoons extra virgin olive oil

  • Turmeric, to taste.

  • Black pepper, to taste.

  • Moderate amounts of salt for cooking

Procedure

  1. Wash and dice the courgettes.

  2. Boil them in lightly salted water until tender.

  3. Cook the wholemeal spaghetti in salted water.

  4. In a bowl, mix together the ricotta, turmeric and pepper.

  5. Gradually add the pasta cooking water until you have a smooth, velvety sauce.

  6. Drain the pasta when it is al dente.

  7. Combine the pasta, courgettes and ricotta cream.

  8. Finish with a spoonful of extra virgin olive oil.

  9. Serve with a sprinkling of pepper.
