It is led by Francesco Lorusso, chef, and Antonio Menchise, dining room manager, who have returned to Basilicata after tours around the world.
Between the kitchen and the dining room, a virtuous circle develops for a course that puts the customer at the centre: both the dishes and the welcome, the mise en place and the wines, can be considered both object and concept.
