Camilla Cake
A good, light cake for a tasty snack
Camilla cake made with carrots, walnuts and orange is indeed a perfect cake for any occasion and an easy recipe to prepare.
Ingredients
- 100 g sifted sugar
- n.2 whole eggs
- 6 finely chopped walnuts
- 2 grated carrots
- q.b. of chocolate chips
- 1 orange zest and juice
- 130 g flour of which 80 g type 1 and 50 g rice
Procedure
In a bowl, mix the eggs and sugar with the help of an electric whisk until frothy.
Add all dry ingredients one at a time in the order listed until a homogeneous dough is obtained.
Line a baking tray with baking paper and transfer the resulting mixture. Bake at 110° (always adjusting the temperature according to your oven) for about 20 minutes.
Extra tips
- Conservation: The cake keeps well at room temperature in an airtight container for 2-3 days. You can also freeze it to extend its shelf life.
- Variants: You can customise the recipe by adding sultanas, grated coconut or spices such as cinnamon or ginger for a richer flavour.
