Saving dinner light sandwiches

Stuffed aubergines with ham and tomato

Ingredients for 1 person

  • Aubergine, 200 g
  • Sliced lean fat-free, 70 g
  • Chopped tomato pulp, quantity to taste
  • Extra virgin olive oil, q.b.
  • Iodized salt, to taste

Procedure

Cut the aubergines into thin discs, salt lightly and stuff with fat-free cooked ham.

If you like, you can also add tomato pulp in any quantity you like. Close into a sandwich and place on a baking tray lightly greased with enough extra virgin olive oil.

Bake in a preheated oven, choosing a temperature according to your oven until a golden crust is visible, or directly in an air fryer.
