Legumes how to eat them prepared as hummus
Ingredients for 1 person
- Legumes to taste e.g. chickpeas or cannellini beans equal to 50 g raw weight;
- Grated zest of ½ lemon;
- Enough thyme leaves;
- Garlic cloves;
- 1 tablespoon of extra virgin olive oil.
Procedure
Let the pulses soak in cold water overnight with a few bay leaves. Drain them, rinse them and boil them in a pan covered with plenty of cold water.
Cook them according to the cooking time, adding more hot water if necessary. Once the pulses are cooked, drain them, drain well and let them cool.
Blend the pulses together with the other ingredients and season with extra virgin olive oil. Mix everything well, adjust the salt and leave to season before serving.
