Summer shrimp and cucumber salad

Ingredients for 1 person

  • 180 g shelled shrimps
  • liberal amounts of vegetables as desired (cucumber or avocado and grapefruit or tomatoes and salad or spinach, etc.)
  • m.7-8 pitted black olives
  • 1 tablespoon extra virgin olive oil
  • just enough salt
  • 1-2 tablespoons of low-fat white yoghurt

Ingredients

Cook the shrimps in one of the permitted and recommended ways you prefer: boiled in previously salted water or steamed with the addition of permitted Mediterranean seasonings as desired, or in an air fryer previously breaded.

Prepare the cucumbers by removing the peel and cutting them into rounds or julienne strips, etc., as desired.
Add the cooked shrimps to the cucumbers and season with just enough salt, 1 tablespoon of extra virgin olive oil, 7-8 pitted black olives and 1-2 tablespoons of low-fat white yoghurt.

Variation Add grains as desired (black rice, spelt, whole-grain couscous, etc.).
