Tomato boats

Tomatoes stuffed with eggs and anchovies

Ingredients for 1 person

  • Any quantity of tomatoes
  • 1 - 2 hard-boiled chicken eggs
  • 50 g stale bread softened in a little water or milk
  • Chopped parsley
  • Enough salt and pepper
  • Enough breadcrumbs
  • 2 - 3 anchovy fillets
  • 1 tablespoon EVO oil

Ingredients

Cut the tops off the tomatoes, removing their pulp. Prepare a mixture of stale bread softened in a little water or milk and add chopped parsley, chopped hard-boiled eggs, salt, pepper and tomato pulp kept aside. Fill the tomatoes with the mixture, complete with all the nutrients. Sprinkle with enough breadcrumbs and anchovy fillets. Season with 1 tablespoon of EVO oil. Bake as desired in an air fryer or in an electric oven at 160° according to your oven until golden brown.
