Vegetarian meatballs

The tasty alternative for making good vegetarian meatballs

Ingredients for 10/12 persons

  • 1 cauliflower of about 1 kg;
  • 2/3 chicken eggs;
  • 1/2 tbsp grated cheese (Grana Padano DOP or Parmigiano Reggiano);
  • 1/2 tbsp breadcrumbs;
  • 200 g of diced first salt;
  • enough salt and pepper.

Procedure

Clean the cauliflower and cut it into small florets. Rinse them under plenty of running water. Bring a pot of lightly salted water to the boil and cook the cauliflower in it for about 10 minutes. Drain the cauliflower well, removing all the remaining water, and place it in a bowl.

Now mash the florets with the help of a fork, add the eggs, grated cheese to taste, wholemeal breadcrumbs, and enough salt and pepper. Mix until the mixture is homogeneous and workable.

Shape the dough into meatballs and place a cube of primosale cheese inside each one. Dip the meatballs in breadcrumbs, preferably wholemeal breadcrumbs, and place them on a baking tray lined with baking paper, adjusting the temperature according to your oven.

Serve hot with a glass of red wine.
