Vegetarian tartare

Salmon tartare with avocado mousse

Ingredients

  • 1 avocado
  • spices to taste
  • 2 - 3 crushed walnuts
  • 1 tablespoon extra virgin olive oil
  • salt and pepper to taste
  • 150 g salmon fillet
  • juice and zest of 1 lemon
  • q.b. of chives

Procedure

Wash the avocado, cut it into small pieces and place it in a bowl, adding enough spices to taste, 2 - 3 crumbled walnuts, 1 tablespoon of extra virgin olive oil, enough salt and pepper if desired. Blend with an immersion blender until a homogeneous mousse is obtained.

Reduce the previously cooked salmon to small cubes, season with just enough juice and zest of one lemon and if you like with just enough chives.

Once the ingredients are ready, with the help of a spoon create the base i.e. the first layer with your ready-made avocado mousse and complete with the salmon cubes. Accompany with bruschetta bread.
